Another successful healthy meal down following a hard workout! We are feeling like we are on our game! We took 4-5 boneless , skinless chicken tenderloins. You can’t go wrong with Panko bread crumbs , parmesan and a little egg wash. Then seasoned with sea salt , black pepper, Italian seasoning. , onion and garlic powder. .cook at 400 for 25 minutes, then top with fresh Mozzarella and 1 cup of diced tomatoes ..I also added a 1 tsp of parsley , 2 tsp. basil & 2 tsp of balsamic vinegar and bake another 5 min. We Sautéed some yellow squash we needed to use with coconut oil as a side and served it all up with a green salad!. Quick, easy , simple and cheap to make!!! Soooooo goooddd!!!
