Have you ever wondered what to do with those leftover stir fry veggies in the fridge that really isn’t enough to serve as a single side for another meal? I just put them in my breakfast eggs!.I used my mini skillet this morning to minimize mess and clean up and VOILA…Veggie egg sctamble!!! If you are needing something ON THE GO in the car ..just take a whole grain Torilla and WRAP IT UP! Get your veggies first thing each day and you won’t forget to eat them! This was so yummy with whole grain toast and stawbverriea to make a complete nutritious meal… This one had Sautéed spinach , roasted red pepper & mushrooms ..and a sprinkle of Parmesan. .Try it tomorrow!!!
